      I try to fed my family at least two pieces of fish a week and I have come across a fish that is very simple to cook, but it tastes delicious. The fish is red mullet and the taste of red mullet when it is grilled is wonderful in itself you don’t need to do or add

      a lot to bring out its delicious flavour.

      It will take you around ten mins to prepare and around ten mins to cook

      All you need is One red mullet for each person cleaned Three garlic gloves, sliced into slithers Four to five tablespoons of olive oil Two to three tablespoons of balsamic vinegar A few sprigs ...


      • of fresh rosemary chopped very finely Black pepper and sea salt

        And all you do is Get your red mullet and cut three diagonal slits in both sides and put the garlic into the slits. Then put the fish into a shallow dish. Whisk the vinegar, oil and rosemary in a small bowl and then add the pepper.

        Then pour the vinegar mixture all over the fish, cover with cling film and leave to marinate for at least ten mins.

        Put the fish on a grill rack and keep the marinate for basting. Grill the fish for about five mins on each side and brush with the marinate when you turn it.

        Serve the fish hot, sprinkle with the sea salt and serve.
