      Since I live at least half of the year in Alberta, I have learned to cook ‘close to home’ and use some meat that I wouldn’t likely find anywhere other than this province. While I admit that I have not developed a taste for some of the gamier meets, bison is one meat that I enjoy. It has a great flavour, and is leaner

      than beef, so it is actually a healthier choice than most cuts of beef. This recipe can be used with either bison or beef, and it is tasty and simple with either one.

      Ingredients:

      2 tablespoons brandy or whisky 1 ½ teaspoon course ground black pepper ¾ teaspoon salt 1 teaspoon minced fresh rosemary 1 cup finely grated Parmesan cheese

      Tomato Garnish:

      36 cherry tomatoes 2 tablespoons finely ...

        Directions:

        Cut bison into 1-inch cubes; mix with brandy, pepper, rosemary, and salt, and let sit 10-15 minutes.

        Tomato Garnish: Plunge tomatoes into a pot of rapidly boiling water until skins loosen, about 10 seconds; drain and chill quickly under cold water. Remove tomato skins; toss tomatoes with chives, oil, and salt. Set

        aside.

        Place cheese on a plate. Heat cast-iron skillet over high heat; sear bison cubes, in batches if necessary, on all sides, keeping interior meat medium rare, about two minutes per batch. Cube by cube, roll in the cheese to coat. With a short skewer, skewer 1 tomato and 1 bison cube together. Transfer skewers to serving plate and spoon over any leftover oil and chives from the tomato mixture.

        Makes about 30 pieces.
