      My husband spent a ridiculous amount of money of the knife of his dreams, $300 to be exact, and I have to admit, after using it for several years, that it is worth every penny. When I first met him, he was very proud of his chef’s knife, and I learned after cutting myself several times that it was certainly the sharpest knife I had ever used. The San Moritz No Stain X50 is a standard looking chef’s knife, with a black handle and nothing fancy to look at. But it stays sharp

      for months of heavy use, and it has been dropped, usually by me, more times than I would like to admit, and it never breaks. It needs sharpening only about once a year or so, and it has survived lots of rough treatment as well. And the way that it cuts all types of food is remarkable-I have never seen anything like it. Even I can chop, slice and mince like someone who knows what they are doing.

      • always found tomatoes to be a great test of a good knife, and there is no squishing or mashing of the tomatoes, just perfectly and thinly sliced with no mess. Harder vegetables and fruits, like onions, potatoes, and beets, which can be a pain to cut, slice easily with this knife. Meat is also easy to cut, even raw meat, and cutting the fat and grizzle, a chore I hate, is so much quicker. I have sliced bread with it as well, and it prevents the bread from being ‘squished’ like it is
        when I use other knives. For those who are very expert chefs, like my husband, this knife allows them to quickly and efficiently cut anything up, and this making food preparation much less time-consuming.

        Washing this knife is also quick and easy-but I find it very easy to cut myself, so you must be extremely careful when washing it, or using it at all. Years after purchasing it, it shows no sign of wear and tear. It is the best knife I have ever used, and everyone who tries it out says the same thing.
