      Do you like eggs? If you do, there are never too many ways to cook them, right? Here is one more. You will need 3-4 medium sized tomatoes, one small onion, 3 eggs,

      some salt and vegetable oil.

      Dice tomatoes and onion, mix them in a frying pan, add some vegetable oil and salt.

      Fry the veggies on low fire until they are soft and mushy.

      • Add the eggs and immediately stir them inn.

        Add some more salt if you like.

        Reduce the heat to low and let the omelet cook until the eggs are done.

        You can always

        adjust the recipe to suite your taste by using more or less eggs and veggies and putting more or less salt.

        The omelet can be served as a separate dish or a side dish.
