      I have been cooking for twenty years and have my favorite recipes that I follow. Occasionally, however one has to come up with their own dishes and one of my simplest dishes is Lite Summer Pasta. When it’s a hundred degrees outside, as it gets here in Southern Oregon during the summer, nobody in my family wants to eat anything. But the kids have got to have something and the one thing I know I

      can always get them to eat is pasta so I decided to come up with a way to prepare a pasta dish without cooking all day long or spending hardly any money. This dish can be made for less than two dollars if you already have olive oil and garlic seasoning salt in the house.

      Ingredients:

      1 pound of spaghetti pasta 4 tablespoons of olive oil 2 teaspoon of Garlic Seasoning (I prefer Lowry’s brand ...

        Boil the pasta until a fork can cut it on the side of the pot, remove from water and drain really really well, swishing the strainer around until you can’t get any water out. Pour pasta into a serving dish add four tablespoons of Extra Light Virgin Olive Oil (you better brand this time because you won’t be cooking the olive oil). Stir in olive oil, evenly coating the pasta, sprinkle

        garlic seasoning and mix well. Serve. Makes six to eight large servings. This is also good as a chilled dish, simply place compete recipe in the frige for an hour or so until cool and serve.

        This is a really enjoyable and filling dish without overwhelming the body with a lot of spices and flavors on a hot summer day. It’s a family favorite in my house and I hope you’ll enjoy it with your family.
