      I have learned this recipe from my mom ,she used to cook this on special occasions , parties . Every body loved this dish most of all she used to say one full chicken , fish ,turkey or lamb leg on a table look more attractive and gives the impression that loads of work has been done.

      I tried this though only twice but it is marvellous CROWN ROAST Serves 6 Calories /portion: 626 Ingredients 1 crown roast ,made from12 small cutlets Onion, peeled and chopped 1 Butter


      2 oz/ 50g Bread crumbs (white ,fresh) 6 oz/175g Apricot 4oz/100g Peanuts (chopped, unsalted) 2oz/50g Parsley (chopped) 1 tbsp Orange (grated rind and juice) ...

      • 1 Egg (beaten) 1 Lard 1 oz/25g Plain flour
        2 tbsp Lamb/vegetable stock 3/4pt /450ml Gravy browning (optional) Preparation

        Preheat the oven to Gas 5 , 375 f , 190 c.

        Season the meat with salt and pepper.

        Melt the butter and fry the onions for 2 min.

        Remove from heat and add the bread crumbs, apricot ,peanuts ,parsley ,orange rind and juice, and beaten egg.

        Mix well and spoon into the centre of the joint.

        Weight.

        Place in a roasting tin with lard (grease).

        Roast for about 25 min per 11b/450g,plus 25 min, Basting occasionally.

        Transfer to a serving dish and keep warm.

        Drain off all but 2 tbsp of the fat ,add the flour and blend well.

        cook for 1 min.

        Add stock and gravy browning ,if using .

        season, and boil for2 mins.

        Serve the joint with gravy and vegetables of ur choice
