      I created this dish based on a recipe I read on the back of a Stove Top Stuffing mix box. The recipe called for stuffing (obviously), some mixed vegetables, and chicken breast. The recipe itself is very simple.

      But my version, the Autumn Chicken bake is a little more elaborate. The first thing you’ll want to do is grill or


      sautee your chicken breasts (at least 1 pound.

      ) Then set this chicken to the side after it’s cooked. Prepare the stove top stuffing as the box calls for.

      But add the following extra ingredients to give it some kick: garlic powder, ¼ cup of chopped celery, 2 teaspoons of dried dill, a teaspoon of onion gravy mix, and a dash of ...


      • onion powder. In another pot (or in a microwave) steam the following vegetables: fresh chopped carrots, frozen broccoli florets, and frozen peas.

        Mix the vegetables into the stuffing. Chop the grilled/sautéed chicken and then mix that into the veggie/stuffing concoction.

        When that is done, place this in a casserole dish, and then top the casserole with shredded cheddar cheese and

        a light dusting of Italian bread crumbs. The bread crumb topping (this must be extremely light) will give the casserole a nice cheesy crust.

        Let the casserole stand for at least 5 to 10 minutes, and then serve. This is a wonderful fall dish to have and share with friends.

        It’s also a great dish for pot luck events because it’s filling, yet light.
