      If you are a lover of lasagna, you will probably love this treat. This is really a mexican recipe that borrows heavily on the Italian original.

      However, instead of layering noodles between the meat/cheese mixture, you use tortillas.

      Corn tortillas will provide the casserole


      with a slightly sweet flavor.

      Flour tortillas slice better and will neutralize that sweet flavor of the other ingredients.

      It is your choice, which one you’d like to use.

      In any event, the filling can be made with lots of different ingredients.

      I prefer to layer refried beans, meat, black beans and corn.

      Then this layer is covered with cheese (triple flavor Mexican blend) and salsa.

      A layer of tortillas is then put on top.

      You continue these layers until the pan is full.

      best to completely cover the entire top layer with lots of cheese so that it soaks down into the dish.

      Don’t brown the cheese right away, give the casserole at least 20 to 25 minutes so that all the ingredients in between have a chance to

      melt.

      Place a few sprigs of fresh cilantro on top as garnish (after the casserole has been removed.

      ) Leaving the cilantro on in the oven will burn it and ruin it.

      Keep a dollop of sour cream off to the side for taste, and you’re done!
