      I love mussels and I eat them a lot, they are full of flavour and so easy to do. One of the easiest ways to do mussels is with white wine and garlic. They make a great starter.

      You will need for this simple recipe 4 5 lb of live mussels 1 tablespoon


      of olive oil 1 oz of butter 1 small onion or 2 shallots chopped finely 2 cloves of garlic chopped finely Quarter of a pint of dry white wine Fresh parsley sprigs Black pepper 2 tablespoon of fresh chopped parsley to garnish Bread of your choice to serve

      • mussels are closed. [Throw away any mussels that are cracked or that doesn’t close when you tap them]. Remove the beard from the mussels and rinse very well.

        Heat the oil and butter in a large pan, add the onions/shallots and garlic and fry for four minutes, until they are soft.

        Then pour on the

        wine and add the parsley sprigs. Stir well, bring to the boil, and then add the mussels. Cover and cook for seven minutes, giving them a shake a couple of times until the shells open [throw away any that stay shut].

        Put the mussels and all the juices into a bowl and put on the chopped parsley and black pepper. Serve with your bread and a glass of your favourite wine.
