      I would like to share with you a very simple delicious and very quick Thai-style corn soup; it makes a great starter or an easy lunch. This recipe takes less than ten minutes to prepare and cook. The ingredients here serve four people.

      You will need Half a teaspoon of sesame


      or sunflower oil 2 spring onions sliced very thinly 1 garlic clove [crushed] 1 pint of chicken stock 15 oz of can creamed corn [or you can puree canned sweet corn in a food processor for about 3-4 seconds until it is creamy] 8 oz of cooked peeled prawns 1 ...

      • teaspoon of green chilli paste or chilli sauce, this is optional and added to your own taste Salt and pepper Fresh coriander leaves for the garnish

        First you heat the oil in a large saucepan and sauté the spring onions and garlic until they are soft.

        Then stir in the chicken

        stock, creamed corn, prawns and the chilli paste or chilli sauce [if you are using].

        Bring the soup to the boil, stirring occasionally. Add the salt and pepper to taste, then sprinkle with the fresh coriander and serve straight away.

        You can also use crab instead of prawns or you can use both, fresh crab tastes good but canned crab is just as nice.
