      I first learned about this recipe through the Rachel Ray show. It’s now a Rachel Ray recipe. Rachel was featuring a lady (Stephanie) who has vowed to cook all of her meals in a crockpot for 1 year.

      She talked about an enchilada recipe. I visited her website,


      which is actually set up as a blogspot. I quickly found the recipe located under Mexican food.

      The basic ingredients are: 2 cups of cooked chicken, 28oz can of enchilada sauce, 1 orange pepper, 1 yellow pepper, 1 can of black beans, 1 can of black olives (sliced), 6 corn tortillas, 2 ...


      • 1/2 cups of cheddar shredded cheese and sour cream.

        I omitted the peppers and used extra cheese. My daughter is learning to cook. This was a fantastic cooking project for her. She was able to quickly pull all of the ingredients out. She chopped up the chicken in bite

        size pieces and chopped up the olives.

        She began layering the ingredients as instructed in the recipe. She loved it! It was fun for her.

        The result, a great mexican dinner. We also served ours with basic corn chips. This meal will feed a family of 6 easily.
