      This recipe is one of my favorites and it’s very easy to make. In Greece, we usually make this food on 25th March which is a national and religious celebration and the main dish of the day is fish, usually cod.

      Either fried, boiled or cooked.

      On that day all restaurants in Greece serve it.

      Someone could say that ’skordalia’ is a dip, but it is not.

      Basically it


      accompanies the fish and the salad of boiled long green beans.

      You will need: * 1 kilo potatoes * 8-10 cloves of garlic * the juice of one fresh lemon * ½ cup olive oil * 1 teaspoon salt Boil the potatoes.

      Crush the garlic to become a smooth paste.

      When potatoes are boiled put them in the blender to become a soft pulp.

      • oil, the salt and blend them again for a couple of minutes.

        It’s ready to be served.

        The way we serve it is with extra boiled potatoes and boiled long green beans and on top we add the ’skordalia’.

        One small tip; just because it contains much garlic make sure that you have chewing gums with you

        after this meal.
