      I love chocolate cakes, and this dark chocolate cake mix has proved to be very good. The mix comes in a 18.

      25 oz box, with a protective plastic bag inside.

      The cake is very easy to make; the clear directions


      are given on the back of the box.

      Basically, it is one of those “mix & bake” things: you put together the cake mix, 1-1/4 cup of water, 1/3 cup of oil, and 3 eggs, blend it all together, then ...


      • pour into a greased cooking pan and bake in the oven, at 350 degrees.

        The baking time depends on the size of the pan you have chosen (several different ones are listed on the box, with pictures).

        You can also

        use this mix to make cupcakes.

        The end result is always good - the cake turns out fluffy soft and very “chocolatey.

        ” For extra moist cake it is recommended to add 1 cup of pudding into the mix, but I’ve never tried that.

    Adding one less egg shouldn’t make a substantial difference. However, in lieu of the one egg, you can add either two tbsp of potato starch, or 1/4 cup of mash potatoes. Both of these would be sufficient alternatives.

    My mom passed away lasy year and one thing I remember she used to always use Pillsbury Dark Choclate cake mix and she would increase the eggs to 5 separate the yolks and the whites beat them both stiffly and fold into the batter, she would not add any fat at all, no oil…. and would produce a very effective chocolate sponge cake from the box… I do not remember if she used anything else though. Does this sound viable? Am I missing some key ingredient to turn a box cake mix into a sponge cake mix?
