      Ingredients:

      1 pound mixed mushrooms which are cut into thick slices or halved, depending on the size

      2 medium carrots which are peeled

      1 tablespoon vegetable oil

      2 tablespoons red curry paste

      1 medium yellow onion which are thinly sliced

      1 red bell pepper, removing the seeds and cutting them into strips

      1/4 cup tamari or soy


      sauce

      3 tablespoons tamarind concentrate or 3 tablespoons

      lemon or lime juice

      2 cans coconut milk

      1/2 teaspoon ground tumeric

      • a mix of domestic and wild such as shiitake, crimini, chanterelle, enoki or portobello.

        You can also use lobster mushrooms as I did sometimes. Serve this soupy curry piping hot over a bowl of rice. Alternatively, you can also serve this delicious dish over lunch or dinner, whichever is preferable.

        Remember to always clean the mushrooms by brushing off any excess dirt with a towel or pastry brush. If the mushrooms are especially dirty, quickly rinse them under running water. Simmer and serve is the method and it is pretty straightforward. I have a fantastic time making this recipe.
