      This recipe is concocted via trial and error by my mom. She briefed me the recipe and I have tried making this Thai red curry paste before and though this is not my specialty, it is none too bad if I give it a chance. But I’m not really a big fan of Thai red curry paste though.


      1/4 cup coriander seeds

      2 tablespoons cumin seeds


      cup red pepper flakes

      2 tablespoons arame

      2 tablespoons water

      2 stalks lemongrass

      1/4 cup chopped, peeled, fresh ginger

      1/2 cup chopped shallots

      1/2 cup chopped garlic

      6 lime leaves

      2 tablespoon salt

      1/4 cup vegetable oil

      • the red pepper flakes in a spice or coffee grinder and set aside. Then prepare the arame. You don’t really need to clean the grinder beforehand and instead, put the ground arame in a small bowl with the water and soak for about 10 minutes.

        The last two steps would be to prepare the lemongrass. Trim the white bottom as well as the dry hollow top of

        the lemongrass. And remember to discard. Peel away a few of the tough outer leaves and slice what remains very thinly. Lastly, blend the paste. Put all the ingredients but the oil in a food processor and process. You will see a drizzle in the oil and keep on processing until a smooth paste forms. There you go for your Thai red curry paste.
