      This is the first time I have ever attempted a recipe such as this one. I’ve made mashed potatoes, and baked them. But never like this. Anyway, it’s fairly simple:

      Take one or two Idaho baking potatoes, bake them and mash them.

      Add (1) tablespoon of cream cheese, a 1/2 cup of milk, one teaspoon of butter, and begin


      to stir.

      To season, I used a sprinkling of dried dill, some black pepper, and salt.

      Stir this mixture on medium heat until the potatoes are a nice chunky consistency. Top with a little shredded cheddar (yes there is a lot of cheese)–and serve.

      This is a really simple recipe to make. It’s quick, and it goes wonderfully with fried chicken,


      • lean beef, or just vegetables. The kinds of seasonings you choose may vary. Some may simply want garlic and butter, with no cheese. Some may choose to make their potatoes spicy by adding cayenne, or some other hot spice. You may also add things like scallions or red peppers. This will provide color, if you’re
        serving them for a special occasion.

        The quickest way to bake the potatoes is in the microwave. But if you don’t have a microwave and want to “cheat”, you could slice the potatoes with their skin on, boil the chunks, and then mash them. It’s actually the same effect. It’s the CONCEPT that makes this dish semi-trendy.
