This recipe takes some time and work, so we only do it for company. While plain mashed potatoes can be rather boring, this dish is unusual and tasty.

      First, you make regular mashed

potatoes (do not use instant mix, make the real thing).

While potatoes are being cooked, open a couple of canned mushrooms, drain them, and fry with chopped onion on vegetable oil.

      Then place ...

      • a layer of mashed potatoes into a baking dish, add a layer of fried mushrooms & onion, and cover with another layer of mashed potatoes.

Smear some sour cream on top and sprinkle

        some shredded cheddar cheese.

Bake in the oven for 10 minutes on 350 degrees.

        Serve hot.

The dish is tasty and very filling.

It works great as a side dish for steak, pork chops, or ribs.
