  • My goal is to cook every recipe in this book, and even when I finally reach my goal, I am going to go back and reread this book because it is such a beneficial resource to my cooking and I believe every cook, especially food bloggers, should have this book on their bookshelves

    When it comes to anything related to cooking, I feel as if I am always the last to know about amazing cooking products or great cooking television shows. America’s Test Kitchen has been airing on PBS since 2001, and I just discovered it a few months ago and fell in love with the ease and education of cooking the show delivers. The hosts break down the cooking process in such a way that would turn someone who burns scrambled eggs into a world class chef. I went on Amazon trying to find back episodes to purchase when instead I came across a collection of cookbooks the show has produced over the years, and the one cookbook that really caught my eye was “The America’s Test Kitchen Cooking School.”

  • “The America’s Test Kitchen Cooking School” is a massive cookbook in both size and weight with over 800 pages. If I had to compare this book in terms of size, I would compare it to the Culinary Institute of America “The Professional Chef” cookbook. The main two things that really drew me to this cookbook is the amount of visual cooking techniques in terms of step by step pictures of dishes, and the comprehensive knowledge of cooking provided to help even the most novice of all cooks.

  • Of all the cookbooks I have used and read, aside from “The Joy of Cooking”, this one has one of the most detailed cooking basics section I have ever come across in like forever. There are dictionaries of cooking terminology–ingredients, cooking techniques, knife skills, cookware, etc.–which includes pictures to help you familiarize yourself with each word and technique.

  • My favorite part of the cooking basics section is the area of correcting seasoning errors. In the past I have thrown away food that had potential because I have over seasoned it too much, but I didn’t know how to correct it. Even if it’s prepared food and it’s over seasoned, I can still use the following tips to adjust the taste to my liking: if food is too salty, add acid or sweetener; too sweet, add acid or seasonings; too spicy or acidic, add fat or sweetener. Those three tips alone have made me both a better and more confident cook. If you read no other part of this book, I highly suggest reading the cooking basics section because once you have mastered that area of cooking, then executing the recipes will be a breeze.

  • After the cooking basics chapter, the book is broken down into dishes: eggs, vegetables, poultry, desserts, etc. Another thing I really appreciate about this book is how before you even start executing any of the recipes, there is a core technique which shows you how to cook the ingredient in a variety of ways which helps you prepare the basic recipes as well as some of the more advanced ones. For example, eggs is probably one of the easiest things to cook; however, I am always amazed how many people who post their breakfast pictures they cooked on social media have brown eggs or overly peppered eggs shown. I don’t know about you, but I find nothing appetizing or edible about burned eggs. At the beginning of the eggs chapter, there are several egg cooking techniques that are demonstrated with step by step pictures on how to properly cook and season. Even though I am past the scrambled eggs training wheels of my cooking, I do find myself reverting back to the omelet section because I can never have that perfectly round omelet, and the French omelet is definitely my Achilles heel.

  • If you love cooking, whether you’re a novice or chef, you will really appreciate the quality of this book. As you flip through the pages, you will see the love and expertise for cooking throughout this book. I felt like America’s Test Kitchen staff wants you to genuinely have a solid cooking foundation to be creative with your dishes while making sure you have accurate knowledge and skills that will make cooking less stressful.

    I have prepared half of the recipes in this book and believe me when I say they are easy to execute if you prepare yourself well. My goal is to cook every recipe in this book, and even when I finally reach my goal, I am going to go back and reread this book because it is such a beneficial resource to my cooking and I believe every cook, especially food bloggers, should have this book on their bookshelves.

i have always struggled with learning new cookbook recipes. but this book was very easy to follow along and understand. i would definitely recommend it to others
