This is my grandma’s recipe of fried potatoes that I loved when I was little. I’ve noticed that no other way to cook potatoes can duplicate the taste.

The process is easy enough, although it might take time since you actually cook the potatoes

      twice - well, sort of.

      First, you boil them.

Then you cool them off in cold water (or just by letting them sit on the kitchen counter, if you’ve got time); then you peel them and dice them into medium-sized pieces.

      Place some butter ...

      • onto a frying pan and turn on the heat.

When the butter melts, put the potatoes in the pan as well, add some salt and chopped onion (not too finely chopped).

Since the potatoes are already cooked, you don’t have to fry them for

        a very long time.

Just wait until they obtain than nice golden color, or until the onion is cooked, and you’re done.

You will need to stir the potatoes occasionally as you are frying them, and I usually add more butter in the process.
