While there are various types of gluten free flour mixes, this one is my favorite. It seems to have the best combinations of the flours used and it can be substituted for regular wheat flour in recipes granted that you have xanthan gum to accompany it.
The flour has a bit of a metallic smell and taste when it is not cooked. This disappears
when it is cooked. It is important that you cook the products properly or the strange metallic taste will be there and can potentially ruin the end product. I have used this flour in cookies, cakes, gravies, sauces, pancakes and a number of other things. I generally favor the biscuit and baking mix by this brand because it includes the xanthan gum however, this all-purpose flour comes a close second.
This flour blend gives a nice consistency to the recipes that I have used it with. It is easy to mix in with a number of different ingredients and it is smooth. There may be some lumps in the package but they are easy to break apart even without a sifter.
