      This is perhaps the best gluten free all purpose baking mix that I have tried. There are other mixes for pancakes, biscuits, cookies and other such products, but this one covers them all. There are two recipes included on the back of the package which work out quite well but this mixture can be used for so much more.

      So far I have used the mix for regular pancakes, sweet crepes, spiced crepes, all sorts of cookies, cakes, gravy and dozens of


      other things. This mix is made from a combination of flours plus xanthan gum. Although you can technically use a flour mixture for the same purpose, since the baking mix already has the xanthan gum in it, you don’t have to buy your own. This makes it easier to substitute flours in traditional recipes.

        As with most gluten free recipes, you should make sure that the goods are cooked properly or it will have a slightly metallic taste. When you smell the baking mix, you will notice that it smells slightly metallic. This odor and taste will disappear when the item is fully cooked. This doesn’t interfere when you are making chewy cookies. I have made

        chewy chocolate chip cookies with a soft center and there was no metallic aftertaste.

        The package sells for about six dollars and you can get several batches of cookies, pancakes or other items from it depending on the recipes that you use. As usual, because it is gluten free, it is more expensive than regular wheat flour. This being said, making your own cookies and cakes at home with this flour is cheaper than buying regular premade gluten free cookie mixes or premade cookies.
