      I crave tiramisu on a regular basis. As much as I love it, my body doesn’t love all the fat it contains. The following is a low-fat recipe for one of my favorite treats.

      15 ounce container of fat-free ricotta cheese 1 teaspoon vanilla extract 1/2 cup confectioners’ sugar 1 3/4 cup lite whipped topping, thawed 1 angel food cake 1/2 cup warm water 2 teaspoons instant coffee/espresso granules 3


      tablespoons chocolate syrup cocoa powder, chocolate shavings or raspberries to garnish (optional)

      Using an electric mixer, blender or food processor, mix ricotta cheese, vanilla and sugar until smooth.

      Transfer mixture to a bowl and fold in 3/4 cup of the whipped topping.

      Store mixture in refrigerator.

      Cut angel food cake horizontally into thirds.

      In a small bowl, stir coffee/espresso granules, water and chocolate syrup until the granules have disolved.

      Brush coffee mixture ...


      • onto each layer of cake.

        Cut cake into pieces that are approximately 2 inches in size.

        Place about 1/2 cup of cake pieces in the bottom of a parfait glass, top with 2 tablespoons ricotta mixture.

        Add another layer of cake pieces and ricotta.

        Top with 2 tablespoons whipped topping; garnish with cocoa powder, chocolate shavings or raspberries, if desired.

        This recipe gives you enough to make 8 parfaits and will store

        a few days in the fridge. If you don’t want that many servings all at once, you can always halve the recipe. Prep time is about 30 minutes.

        This recipe is so easy to make! It’s great for the warmer months because it doesn’t require turning on the oven. The finished product looks impressive enough to fool people into thinking I actually know my way around the kitchen. The taste and texture are so rich and indulgent that you’ll forget you’re eating a healthy version!
