      Recently, I bought 2 pounds of frozen cooked shrimp because there was a really good sale at my grocery store. I love shrimp, but I had a lot of it and I was getting tired of eating shrimp cocktail, so I wanted to find an easy shrimp recipe. I decided to search the Internet for recipes, because I knew it was likely that I would find something interesting there. I ended up finding a recipe for Easy Shrimp Quesadillas that looked

      like it might be good, because I haven’t ever had a quesadilla that I didn’t like.

      Here is the ingredient list I used to make them:

      1/2 cup of cooked shrimp, coarsely chopped 4 flour tortillas 1 cup of shredded Mexican cheese blend 1 tablespoon of parsley 1/4 cup of green onions, finely chopped

        The quesadillas were easy to make, just as promised. However, the recipe almost seemed a little too simple, so I was concerned that the quesadillas might be lacking a little flavor and seasoning. My first bite was good, but also confirmed my suspicions that they needed something else. I thought the green onions added nice flavor, but not quite

        enough, because the shrimp tasted a little bland in the quesadilla. I added some hot sauce to my quesadilla before I finished it, and that seemed to help a little.

        I may make these again, but I think I’ll try adding green chiles, salsa and maybe a few jalapenos to the recipe the next time. I think I need to figure out the correct combination of additional ingredients to bring out more flavor in the Easy Shrimp Quesadillas. They weren’t perfect, but they seem to have potential.
