      I make a lot of Mexican entrees, but I’m always unsure about what to serve on the side. I wanted to find a good side dish to serve with tacos and enchiladas, so I started looking for recipes. The Favorite Brand Name Simple 1-2-3 One Dish cookbook is one of my favorite cookbooks, so I looked there first. I found a recipe for Mexican-Style Rice and Cheese under the “Meatless Meals” section, and it looked like it would be the perfect side dish for a Mexican-inspired meal. I especially liked the fact that the instructions call for this recipe to be made in a slow cooker. I

      could quickly prepare it in the morning and not have to worry about it again until dinner.

      Here are the ingredients necessary to make Mexican-Style Rice and Cheese:

      1 can (15 ounces) of Mexican-style beans 1 can (about 14 ounces) of diced tomatoes with green chiles, undrained 2 cups of shredded Monterey Jack or Colby cheese, divided 1 1/2 cups of uncooked long-grain rice 1 large onion, finely chopped 1/2 package (4 ounces) of cream cheese 3 cloves of garlic, minced

        It took me less than 10 minutes to prepare my Mexican-Style Rice and Cheese. I prepared it in the morning, left for work, and by the time I came home it was ready. I transferred it to a serving dish and garnished it with jalapenos for extra color. I got the idea to garnish it from the picture in the cookbook. It looked deliciously cheesy, and I was really looking forward to trying it. After

        tasting it, I knew I had a new favorite side dish. The blend of the cheeses, beans and rice with the spice was incredible. Every bite was full of cheese and flavorful seasoning. Even though I served it as a side dish, I could have served it as a main dish, because it was very filling. I added a little hot sauce to my portion, but other than that, I don’t think this recipe needed anything extra.

        This was such an easy dish to make, but these were the best beans and rice I’ve ever had. This is definitely a recipe I want to share with friends. I’m already looking forward to making it again.
