I think one of my biggest challenges in the kitchen is finding recipes for appetizers and snacks that are filling and generally pleasing to a wide range of tastes. Most of my family and the majority of my friends enjoy Mexican food, so I often resort to making different Mexican recipes for events. One of the most popular dishes I’ve made is a layered Mexican dip. Family and friends will often request what they refer to as my famous nacho dip. Like several of my recipes, I actually found this recipe on the Internet, so I can’t really take credit for it. I’ve already told everyone who has asked that it’s an easy recipe that I found on the Internet, but I think most of them just don’t want to be bothered to take the time

to actually assemble the ingredients. I guess sometimes things just seem to taste better when someone else takes the time to make them for you. That’s the main reason I think this recipe has been such a success for me. I’ve made it for myself a couple of times, but I made a promise to myself that I wouldn’t make it anymore unless I’m going to an event, because I like it so much that I could almost eat the whole thing in one sitting, and I’d rather share all of the calories with someone else.

I like to make this recipe the night before I’m ready to serve it, but no matter how soon before an event I make it I’m always satisfied with the result.

Here are the ingredients needed to make Mexican Layered Dip:

      1 (16 ...

      • ounce) can refried beans 1 packet taco seasoning mix 1 large tomato (chopped) 1 cup guacamole 1 cup sour cream 1 cup shredded Cheddar cheese 1/2 cup chopped green onions 1/4 cup chopped black olives

I like to take my time and pay attention to details when I’m making anything, and this dish usually takes me less than 20 minutes to make. First, spread the refried beans in the bottom of a casserole dish. I like to use a clear casserole dish, because the dip is very pleasing to the eye once it’s assembled. Next, layer the chopped tomatoes over the beans. Add the sour cream over the tomatoes, and the guacamole over the sour cream. Then, sprinkle the dip with the shredded cheddar cheese followed by the green onions and black olives. Finally, cover and

refrigerate the dip for at least 2 hours. Simply remove the dip from the refrigerator when you’re ready to serve it, and serve it along with a bowl of tortilla chips.

This is such an extremely easy dish to make, and I think it’s always a hit at parties and events because I think it appears that it’s more complicated to make than it actually is. I can highly recommend this recipe for anyone who wants to impress a group of people but doesn’t have the time or skills to assemble something complicated. I’ve served this dish at many events over the past few years, and regardless of what else is on the appetizer table this dip is usually the first dish to disappear. So I encourage anyone going to a party or event in the near future to give this recipe for Mexican Layered Dip a try.
