      This is a “fancy” potato dish that I usually make for company, or when I want to have our family dinner look a little special. It takes some extra effort to make, but, in my opinion, it is well worth the trouble.

      What you need is several large potatoes, some

      fresh parsley, garlic powder, salt, and vegetable oil.

      The cooking process is not difficult, but time consuming.

      First, you peel the potatoes and cut them into thick circles, about a half-inch each.

      Then you place these circles on a frying pan with some vegetable oil in it and fry them,

      • on both sides, until they are half-cooked.

        Since they take a lot of space, I use two or even three frying pans at once.

        When you are done with this, place the potato circles on a greased cooking sheet (or two) and sprinkle each one with salt and garlic powder.

        Now snip the parsley as finely as you can, and place a pinch of it in the middle of each potato circle.

        While you are busy with that, preheat the oven to 300-350 degrees.

        Bake the potatoes for 15 minutes or until golden-yellow.

        Enjoy! The finished dish looks very nice and tastes even better!
