      2-3 eggs 2 carrots 1 medium size onion 2 medium size tomatoes 1 sweet pepper Garlic powder Salt Vegetable oil

      Chop onion and fry in


      vegetable oil for 2-3 minutes. Peel and grate carrots, finely chop tomatoes and pepper (remove the pepper seeds first).

      Add carrots, tomatoes, and pepper,


      • stir, and fry on medium heat until soft.

        Sprinkle some garlic powder.

        Add the eggs, add some salt, stir well and cook until the

        eggs are done.

        Flip if necessary.

        Serve hot.

        *Note: some people I know do not like the peppery taste, so you might try cooking this dish without the sweet pepper for them.
