      1 medium size onion 1 medium size boiled potato 8 slices of bacon 8 fresh mushrooms (champignons) 4 large tomatoes (or 6-8 small ones) 4 eggs 3 tablespoons shredded cheddar cheese 1 tablespoon olive oil

      Pour olive oil on a large frying pan, add butter and start heating the pan. Add chopped onion and fry it ...

      • on low heat for 2-3 minutes.

        Cut the 8 slices of bacon into smaller pieces, place on into the pan and fry for 2 more minutes.

        Dice the potato and mushrooms, add into the pan,

        stir well.

        Add chopped tomatoes and parsley.

        Beat the eggs with 2 tablespoons of water, some salt and pepper.

        Pour the mixture into the pan and fry until the eggs are done.

        Sprinkle the shredded cheese on top and let it melt just a little.

        Serve hot.
