It’s rainy season once again and a bowl of hot soup will definitely soothe the senses and put you in a very relaxed mood. While it’s raining cats and dogs outside, I always make it a point to share a steaming bowl of soup to everyone in the family. It calms the nerves and after a few sips, I end up curling in one of the soft fluffy couches in our living room with a good book in my hands. Now that’s

what you call a relaxed state inside your own humble abode.

This is one of the easiest soup recipes any beginner could muster. Preparation time usually lasts for 15 minutes and cooking time is at least 55 minutes. You must prepare 2 to 3 tablespoons of olive oil, dice 5 large onions, 4 cups of beef stock or 1 beef bouillon cube dissolved in 4 cups of water, salt and pepper, 1 tablespoon of dried thyme, 4 slices of toasted wheat bread, 4 ...

      • slices of cheddar or provolone cheese, 4 tablespoons of grated mozzarella cheese. Remember that you can bring out the sweetness of the onions when you cook them slowly until they turn brown. This is a secret to this wonderful soup recipe.

When you have gathered all the ingredients, you may start by heating the olive oil in a large pot. Add the sliced onions. Cook it over medium-low heat for about 25 to 30 minutes, or until onions turn brown in color. Pour

beef stock into the large pot. Then bring to a boil. Simmer for about 20 minutes. Season with salt and pepper and add thyme. Ladle soup into four oven-proof soup bowls. Get the wheat toast and cut to fit on top of the bowls. Place the toast on top of bowls. Place the slice of cheddar cheese on each toast and sprinkle with grated mozzarella cheese. Boil in a preheated 350°F oven until cheeses melt and appear bubbly. This recipe makes 4 servings.
