      This is one of my newest favorite recipes. Every summer I have a large garden of vegetables and we get very tired of eating them the same way so I am always looking for new ways to cook the vegetables we grow. This meal has the advantage of using several garden vegetables and of being cheap and easy to make. Even if you do not have a garden you can make this recipe for less than $5.


      I have tried a lot of zuchini recipes and this one beats them all. I like this because you can slip vegetables into your children’s diet and they will not notice. This recipe tastes like pizza and it takes me about 15 minutes to prepare and it is very easy so I give it a 10 for simplicity, taste and price.         Here is the recipe.

        Ingredients: 1 pound of sweet or hot sausage 3 cloves minced garlic 1 green bell pepper chopped 1 small onion chopped 1-2 zuchinnis thinly sliced 2 roma or 1 large tomatoes 2 cups shredded mozarella 1 jar spaghetti sauce salt and pepper to taste 1 tablespoon olive oil.

        Directions:

        Heat olive oil

        in a sturdy pan and brown the sausage. When the sausage is almost cooked, add the onion, garlic, pepper and cook until done. Pour a small amount of the spaghetti sauce into the pan and add zuchinni across the bottom of a large baking dish. Add in the spaghetti sauce to the sausage mix and simmer 10 minutes. Pour the sauce mix onto the zuchini and top with sliced tomatoes, then put the mozarella on top. Bake in a preheated oven for 30 minutes.
