      Who loves chicken? Well, my whole family does! You can eat chicken anyway you want, during special occasions or even on ordinary days. Besides, the price of chicken meat is not really expensive, compared to beef, and other kinds of meats and seafoods. Here’s another recipe I learned from Judy Lew’s Chinese Cuisine cookbook which I have tried not more than a month ago. This is just simple and very easy but, tastes very

      good!

      Here’s what you’ll need: 2 whole chicken breasts or one whole fryer 2 tbsp vegetable oil

      For Sauce 1: 1/2 cup soup stock 1 tbsp minced ginger root 2 cloves garlic, minced 1/2 tsp sugar 2 tbsp soy sauce

      1 tsp hot sesame seed oil cucumber 1 tsp salt

      For sauce 2: 2 tbsp rice vinegar 1 tbsp mirin (rice wine) 1 tbsp sugar

      • a boil. Simmer for 30 minutes and turn off heat. Let chicken poach in the pot (about 15minutes) until done. if you choose the whole chicken fryer, it’ll take about 45 minutes. Remove chicken from pot and brush it with sesame seed oil. Allow to cool.

        Combine soup stock,, ginger root, garlic, sugar and soy sauce in a pot and bring to a boil. Reduce it by half. Allow sauce to

        cool and add the sesame seed oil.

        Cut and slice cucumber thinly and sprinkle it with salt. allow to sit for 5 minutes and then rinse. Drain. Pour over cucumber and set aside. Remove the bones from chicken and cut into bite-size pieces. Arrange on a plate and garnish with sliced cucumber pieces. Serve sauce as a dip or pour over the sauce on top of chicken.

        This will make about 4-5 servings.

        If you are in a hurry, you can also use the poached chicken with oyster sauce as dip.
