      I recently went in search of a recipe book that I had misplaced, and when I found it, called Hotter than Hell by Jane Butel, I immediately printed off some recipes to try. The book has recipes from all over the world, and the only criterion is that the dishes are hot and spicy, which suits me just fine. This following recipe was a huge hit with my dinner guests last week, and

      I will be making it a lot!

      Ingredients:

      2 eggs or 4 egg yolks ½ cup vodka 10 dashes liquid hot pepper sauce (I used Frank’s hot sauce) 1 ½ teaspoons freshly ground white pepper 1 teaspoon dry mustard 12 chicken thighs 2 quarts vegetable oil for deep-frying 1 cup all purpose flour ¼ teaspoon freshly ground white pepper 1 teaspoon salt 1 cup seasoned fine dry bread crumbs (I seasoned mine with garlic powder ...

        Directions:

        Beat eggs in a large shallow bowl. Gradually stir in vodka. Stir in 10 dashes of the hot pepper sauce, 1 ½ teaspoons white pepper and mustard. Add the chicken thighs, rolling each several times to coat evenly. Let stand at least 30 minutes or up to 2 hours at room temperature, frequently spooning marinade over each thigh. In a deep fat fryer or large

        pot, heat oil to 350 F.

        Meanwhile, mix flour, ¼ teaspoon white pepper, and salt. To fry, coat each thigh in flour mixture, then dip back into marinade, then coat in crumbs. Add thighs to hot oil, 2-4 at a time; be careful not to add so many that the temperature drops. Cook 10-12 minutes or until the meat near the bone is no longer pink. Drain on paper towels. Serve with a bit of the hot sauce of your choice.
