      1 kilo prawns, deveined, but with the heads left on

      1 head garlic, sliced crosswise

      1 tbsp dried chili flakes

      1 tsp Cayenne pepper

      100 grams butter

      1/2 cup olive oil

      1/2 cup lemon juice

      1 tsp lemon zest

      Salt and pepper to taste


      Clean the prawns by placing them under the water. Do not remove the heads of the prawns. It is makes

      an attractive presentation if their heads are intact. Also, it adds flavor to the entire recipe. After peeling, place under a plate or strainer. this will drain the water.       • pan, add butter and olive oil. The oil in the pan though excessive may serve as your sauce. When butter is melted, add the garlic and saute for a couple of minutes, perhaps 3 minutes.then add chili and cayenne. Add the prawns and saute over high heat until it becomes firm and slightly orange. Add lemon juice
        and sprinkle with salt and pepper. Remove pan from heat and add the lemon zest. Make sure that lemon zest is added after you turn off the fire otherwise flavor is dispelled should you do it amidst cooking it. Place in a serving platter. Embellish with onions cut in ring sizes and green bell peppers cut in cubes.
