I haven’t been to an Italian wedding and so can’t tell you how authentic this soup is. I will tell you that for something out of the can, this really is a tasty soup — it could stand a little perking up, but it isn’t too salty like Progresso soups. I like to have a can of this soup handy when it’s disgustingly wet and cold outside like it’s been around here lately. It’s different from the usual minestrone - chowder - split pea bunch. It’s got a delicious cheese flavor to it thatI find very comforting, and the meatballs are plump and tasty. It’s in a chicken/wine broth, so it’s like a fancy chicken meatball soup! This manages to make my rainy days feel like a chance to spoil myself instead of just being inside sighing and hating everything.
